Day 7 – Gluten Free 2013

My first week working on going gluten free has not been a bad one. One slip up while on a road trip, and another day with two crab Rangoons. Tonight dinner was a yummy gluten free pizza with some great topics. It hit the spot! I have more confidence now that I will be able to manage going gluten free, baby steps though. I still need to find bread to buy that makes good toast for dipping in eggs.

I am just finished a book I was reading for some fun and think it is time to order a book on gluten free living. Websites are fun but books just tickle my inner geek girl. When I pick on, and finish it, I will review it here in hopes it might help anyone else who wants to try this.

 Some of the reasons I am going gluten free!

  •  I am going gluten free for 2013 for a number of reasons, one of them is because I suffer (a lot) from Fibromyalgia and my blood work always shows inflammation but the Dr can never find out why. Gluten intolerance is said to cause inflammation  Inflammation is pain!
  • Another reason is because things like whole wheat bread, though said to be healthy, spikes blood sugar, specially mine and is known to spike it more than table sugar even, causing a flood of insulin in the body and insulin loves to convert carbs into fat. I don’t need any more thanks!
  • Gluten is an odd thing, it crosses the blood brain barrier and creates a “high” feeling, and then of course the crash and then comes the craving for more. I have had enough of feeling like I need “more” of carbs and such.
  • Gluten is harmful to the gut!
  • Gluten is known to cause mood issues and linked to thinks like depression and ADHD.

There are different reasons for different people and I can’t tell you that this will work for your issues. I can’t even say that they will work for mine as I just don’t know yet. Give me a few months and I will let you know though how things go for me!

  2. Yum on the pizza! Good luck with going gluten free. We’ve been gluten free for over a year now and I’ve found that making my own bread is cheaper and it stays together better(tastes better too).

  3. Send me your recipes, lol. I have been debating going gluten free as well…mostly for the mood issues you mentioned. I did read that it can drastically alter personalities in some people (rare), and honestly I am needing to try something. If it works it works, if not…one more thing to cross off the list. 🙂

      I wish I had recipes! I suck at cooking honestly! I am new to this and so far my plan is to buy as many gluten free things as possible and make it as easy as possible to start with. My basic dinners are proteins and veggies, steak, baked chicken, salmon, ham! Just leaving out any bread. I want to make meatloaf soon though so I need to find a recipe to replace the bread crumbs in it!

    This looks so delicious. Our family is trying to healthier as well, and I cannot say it has been easy-it is really a challenge at times.

    I was so happy to come across this post! I have also recently adopted a gluten free lifestyle. Your pizza looks incredible and I am salivating at 10 a.m. over pizza (I need help). I am quite health conscious and always looking for new ways to drop some weight. I have quite often reached a point in which NOTHING seemed to work and I would struggle to lose those few extra pounds.I have quite a few friends who are gluten intolerant and have heard from a number of them that there are some amazing gluten free recipes out there that are delicious and extremely healthy (and assist with weight loss!). They have opened my eyes to the wonderful world of gluten *and even dairy free cooking* and I would highly recommend the website http://www.ninacucina.com/. I recently purchased her book, Nina Cucina: Your Healthy Gourmet and I have become addicted to gluten free recipes! I am not a great cook but I found this book (and website) so informative and so easy to follow. For every single recipe the author, Nina Pucillo, gives the nutritional value of each dish and step-by-step instructions on how to prepare the dish. All of the dishes featured in the book are totally gluten-free and Nina has included many recipes that are dairy-free too! Thanks for sharing!       Thank you Stacey, I will put that book on my to get list! Right now I am working my way through books that explain why gluten is bad so I can make sure it sinks in you know? I now know that gluten free does not have to be painful and it can be so yummy and I am not scared about it at all and I do not feel deprived in the least. Maybe that book would inspire me to cook more too!
