Aug 30th — Make Butter

The Prairie Primer had us making butter today! While they did it on the old days with a church and some people have the patience to do with with a jar and a marble we went with using a mixer!

1. 2 cups (1 pint) of heavy wipping cream. (Organic if you can find it!)

2. Turn on low till it makes whipped cream.

3. Turn on medium till it you start to think your crazy and just waisted $4 and 20 minutes of your life.

4. The suddenly you see tiny grains of butter.

5. The quickly you are suddenly being spashed with buttermilk! Turn to low now.

6. Drain the liquid and run on slow again, repeat this till no more liquid is released.

7. Pick up your glob of butter and place in a ice cold bath. Yes, your dunking your new butter that just freed itself of liquid into more. The ice water will help it stay firm enough to let the magic happen. Squish the butter all over and empty your ware and refill. When the ice water stays clear after all the squishing (And squealing because you think your fingers are going to fall off LOL) you are done with the torture! (Ice washing the butter will help it last up to a week rather then just 2 days)

8. Add 1/4 teaspoon salt or more if desired.

9. Store in the fridge!

10. Enjoy!
