The magic of simple fun cupcakes!

 

A few weeks ago found my family very far from home and in need of something yummy, special, but most importantly simple. Our youngest daughter was turning 3! Not being in my own kitchen though and not having much time or being certain of supplies I thought we might just buy a cake. It didn’t feel right though, we normally make things personal for birthdays. I knew though that I was limited so I choose something simple! Colorful cupcakes!

Even the cupcake liners ended up colorful and fun! The kids wanted to keep them all!

The kids enjoyed helping make these. Simple enough, a box of white cake mix, and we used gel food coloring. Split the cake mix into 7 smaller bowls and gave the kids spoons to mix them up. Added about a table spoon of each color into the cup cake livers. We tried layering and then different blobs of color and it it was fun to make and see how they baked up. The coloring was bright but didn’t effect the flavor at all. I think I want these for my birthday this year and the kids would love to make them again. I need gluten free ones though so will be hunting for a great recipe for those! I could hardly believe just how happy the children are with such easy cupcakes.

As a crunchy parent I know that not everyone is ok with food dyes (and there are good reasons) so this might not be for everyone. So far though my children are ok with them so crossing my figures. If your children don’t have issues with food dyes you might want to give these a try!
