Gluten Free Peanut Butter Pie

Happy National Peanut Butter Lovers Day!

Peanut butter often gets a bad rap, and for good reason too. Peanut Butter can kill those who have an allergy to the proteins in it. I imagine it is a special kind of torture to be allergic to a peanut. I really feel for all those people, specially the children. It is imperative that we respect nut free places like schools and day cares and even play grounds in my opinion. One never knows when a simple PB+J from hours before could put peanut oils on an item that could later really harm or kill another child. It just isn’t worth it.

On a brighter note, for the rest of us there is certainly a time and place for Peanut Butter!

 

GlutenFree-Peanut-Butter-Pie

Gluten Free PEANUT BUTTER PIE
1 (8 oz.) cream cheese, soft
1/2 c. peanut butter
1 c. sifted powdered sugar
2 tbsp. milk
1 (4 oz.) container whipped topping
1 butter-flavored crumb pie shell (Gluten FREE)

 

In a bowl, combine cream cheese and peanut butter. Beat with mixture until combined. Add powdered sugar and milk, beat well. Fold in whipped topping. Spoon into pie shell. Cover and chill in refrigerator. Makes 8 servings.
 Pie Shell:
 6 Cups Gluten Free Cereal
 1/2 Cup Butter
 Optional – 1/4 Cup Sugar
 Or 4 cups cereal and 1 cup peanut M&Ms!
 Grind the 6 cups sugar until fine. Mix it with the butter and options sugar. Press firmly into pie pan. Let set in fridge for an hour before filling!

With a bit of help from my 5 year old daughter we put 4 cups of “kix” and another cereal into the food processor. The cereals do not clearly say gluten free, but their ingredients are clean of gluten. Though track gluten from the place this cereal is made is possible. When that was down to a fine powder we dumped it in a bowl and the put the peanut M&M in and goodness was that loud, but it worked!

I am reminded that Crunchy Parenting is hands on parenting. It helps that the kids love to cook!

After it was mixed with the 1/2 cup butter it was pressed into the pie plate and set in the fridge for an hour.

    Well, for those that do have a peanut allergy, or live with a child that has one… There are a few alternatives to PB out there. My new favorite is Sun Butter (www.sunbutter.com). It is peanut/tree nut/gluten free. Another is WowButter (www.wowbutter.com), made with roasted soybeans. That one is not quite my taste tho, it’s a little too grainy in texture.
